The Very Versatile Deviled Eggs

Appearance: Make them cute or elegant or amusing or just plain goofy; form creatures or a scene or just go for beauty. Color the whites or the yolks (visit https://weelicious.com/dye-free-deviled-eggs). The Internet has hundreds of ideas.


Taste: Like chicken - they take to an immense range of flavors and are popular in all seasons. To illustrate, below are guidelines for round-the-world flavors.


Use: Serve them as a lunch dish or in a lunch box, as a snack or picnic food, or as an awesome appetizer at dinner or on your buffet table.


International flavoring: Just hard boil eggs, shell them, scoop out the yolk, and mix with the appropriate ingredients.

  •   French: Mix yolk with mayonnaise, some Dijon mustard and, separately or in combination, chervil, flat parsley, capers, chives. A nice addition is smoked fish. Pipe the mixture into a rosette and dust with paprika.

  •    Greek: Mix yolk with yogurt, a touch of feta, a wee bit of garlic, marjoram or oregano and some lemon zest. Garnish with a sprig of the herb you used.

  •    Russian: Mix yolk with mayonnaise and sour cream in equal amounts. Add dill and some zesty horseradish. Garnish with a sprig of dill.

  •    Indian: Mix yolk with yogurt, a curry powder such as garam masala, garlic and some onion. Garnish with a small amount of a colorful chutney.

  •    Chinese: Mix yolk with mayonnaise and a bit of soy sauce, some grated fresh ginger, garlic, and green onion.  Garnish with green onion rounds.

  •    Korean: Marinate shiitake mushrooms for about one hour in a mixture of soy sauce, white vinegar, brown sugar and garlic. Chop into small bits. Mix yolk with mayonnaise, some of the marinade and the chopped mushrooms. Garnish with toasted sesame seeds.

  •    South African: Mix yolk with mayonnaise. Add diced peppadew peppers. Garnish with strips of green, purple and yellow peppers.

  •    North African: Mix yolk with mayonnaise and yogurt in equal amounts. Add some grated onion, freshly toasted and ground cumin seeds, mint and a bit of lemon juice. Garnish with a mint leaf.

  •    Mexican: Mix yolk with mayonnaise, lime juice, chopped cilantro and chili powder. Garnish with a sprig of cilantro.

  •    Southern U.S.: Mix yolk with mayonnaise, a bit of finely chopped onion and chopped bacon. Garnish with bacon bits.

  •    Canadian: Mix yolk with sour cream, cream cheese and mayonnaise (2:2:1). Add chopped smoked salmon and a few capers. Garnish with salmon roe or a strip of smoked salmon.
